It's Spring! It's Easter weekend! Hooray! In Seattle, the trees are pink and blooming madly. Crocuses are emerging from the earth in a vast array of colors. My heart swells at the sights and the realization that it's our second spring in our beloved city.
There is so much going on right now. We are wrapping up the buying process on our first home in the city, and we have a pair of newlyweds coming to visit us this weekend. What could be sweeter than that?
I do love sweet things. Rather than making a villain out of my sweet-bent, I try to find nutritious recipes to make at home... in between the times I'm running to the co-op for my favorite slice of cake that is. Anyway, I digress.
I wanted to share a few of my favorite vegan treats. I'm trying to sneak in some nutrients as I satiate my cravings, so each of these recipes has something good to offer. Will you try any of these? Be sure to let me know!
- No-Bake Vegan, Gluten Free Chocolate Chip Cookie Dough Bars. (Oh, yes.) Just a note: I added almond milk to the mixture to get the dough to the desired consistency.
- Peanut Butter and Jelly Bars. Luke hardly got to eat any of these.
- Black Bean Chocolate Chunk Brownies. This one packs in plenty of protein while still providing decadence.
